I’m a cheater. There, I said it.

My mom makes full-on, homemade delicious alfredo sauce. I look at it and gain about 8lbs. Me…well, I’m a little less inclined to put the effort in, so I ripped this out of a magazine and make the cheater’s version – easy, low maintenance, not what you’d get in a fancy restaurant, but still delicious and it passes the picky kid test.

I’ll make 2 promises to you right now. One, you will love this recipe and its final product, and two, you can safely and confidently make this recipe when you have company over for dinner. Yes, even in laws. Everyone will be impressed, it’s that good. Dress it up with some shrimp or grilled chicken.

Trust me, people will think you bent over backwards to make dinner, when in reality, you put more effort into wiping down the bathroom with some wet kleenex. 😉

Cheater’s Fettucini Alfredo
300g spaghetti/linguini/fettucini (that’s 1/3rd of a package)
1 1/4 cups chicken broth
1 tbsp flour
1/3 cup cream cheese (again 1/3 of those containers)
3 tbsp grated parmesan
1/4 tsp ground nutmeg
2 tbsp fresh parsley

Cook pasta; when it’s close to being done, start making the sauce (you don’t want to make it ahead of time b/c it will get clumpy).

Sauce: combine broth & flour over medium heat, whisk together; then add cream cheese, 2 tbsp of grated cheese, and nutmeg. Cook 2 mins and stir constantly with whisk until sauce comes to a boil and thickens a bit more. Drain pasta and toss it with the sauce, then add in the parsley.

I save a bit of the grated cheese and some parsley to garnish the dish once it’s ready to be served. Keep the green stuff OUT completely if your kid has an aversion to all colours except shades of beige.
