Simple mac & cheese

I made this the other night, and although Simone looked at it like a bowl full of cheesy poison, we LOVED it. I think she’ll come around one day (seriously, what kid doesn’t love mac & cheese…?) but in the meantime I’ll keep at it b/c this meal is like a big warm blanket wrapped around me. Like one of those Snuggies – have you seen the commercial? Do people really need to buy a big ol’ body blanket? Can’t you just wrap yourself in a robe and throw a blanket on top?

But I modified it to this:

Ingredients

1 (10.75 ounce) can condensed cream of chicken (mushroom) soup
1 1/4 cups milk (just fill the empty can of soup with milk and put it in the pan)
1/2 cup shredded Cheddar cheese (yah, I think I tripped this…)
Clove of garlic
1/2 teaspoon paprika
1/2 teaspoon dry mustard
1 1/2 to 2 cups macaroni
(I also add a few cubes of puree/frozen cauliflower for the veg content)

Directions

Cook pasta in a large pot of boiling salted water until al dente. Drain.
Mix together condensed soup and cheese (and spices, garlic, etc.). Using the empty soup can, measure 1 can of milk; mix into the soup mixture. Stir in cooked pasta. Dump into a greased casserole dish, and cover.
Bake at 325 degrees F (165 degrees C) for 45 minutes.

    What an excellent blog Andrea. Chloe started out eating lots of veggies but has become more and more picky. Well, she still eats a good variety of food, but in such small quantities. Hopefully we can find some things here that she'll go for!Thanks,Andrew

    Andrea! Didn't know you blogged…. it looks great and fun to follow… my boys are picky too. Have you tried quesadilla's? Flour tortilla in a dry pan, spread shredded cheese over 1/2 (optional adds: corn, beans, meat) my kids will only eat it with corn. Toast in the pan until golden & cheese melts, cut with pizza cutter in 1/4's. One of my boys likes to dip in salsa, the other doesn't. It's always been a hit here, thought I would share.

    Well I sure hope I can share some recipes for your picky kids too! I'll have lots to post, but like any blog, this will do better with all of your feedback too.Susan, love the quesadilla idea, yummy. If she doesn't go for it then, fine, I have a lovely snack or meal just for myself. 🙂

    its 6:30am, making the simple mac & cheese for my kids’ lunch today…they are so lucky, at their age, I was making my own bologna sandwiches for lunch.
