When all else fails: eggs & turkey bacon

For about 6 months, I made a scramble egg every single night for dinner, for Simone. Since she’s so anti-meat, I am thrilled that she will eat eggs and turkey bacon, especially because I can nibble on her leftovers if she doesn’t clean her plate. Turkey bacon is so nice and crisp, if we’re in a rush sometimes I cook it up, and break it into little pieces and let her munch on it in the car.

It’s also easy to whip up a scramble egg if we’re at Grandma or Nanny’s house, if Simone decides to protest whatever lovely meal they have prepared for dinner.

My friend Josie puts some puree squash in her scrambled eggs – I would try this, but I’m afraid of jinxing a good thing, know what I mean? I once tried grated (mild) cheddar cheese and those eggs hit the wall like they were shot out of cannon.
