Nanny’s Roasted Potatoes

Rumour has it, my picky kid eats these. Right now I am at Nanny’s house, awaiting this holy miracle to happen right before my eyes. She has the potatoes in the oven as I type…

Nanny’s Roasted Potatoes

Yukon gold potatoes
Peel, chop* (whatever shape/size you prefer), and soak in water (if you aren’t going to roast them right away)
Lay on baking sheet (spray or use a claybake)
Pour melted butter and olive oil over the potatoes
Sprinkle coarse salt and paprika on potatoes
Bake at 400 degrees for 45 mins
Turn after 30mins of baking

*The smaller you cut these, the faster they will cook, and the easier they are to eat with a fork (eg. no cutting up). I actually like to cut these in small pieces/wedges so Simone can inhale without my help cutting them up into bite sized pieces.

    You betchya! Not much, but some, and that's good enough for me. She's a real "taster" instead of an "inhaler". 😉 I'll post a photo soon.
