Watch them "crumble"

Ouch – cheesy title, sorry about that.

This recipe is for my very good friend Sarah. Let me tell you about Sarah, she is one of those friends who makes you think, “how have I gone so long in my life, without her?” She is the single most generous person I know: a couple years ago when Simone was about 8 months old and not napping very well, Sarah was the one person who came to my rescue. She came and looked after Simone so I could get some rest and a much needed massage. She isn’t just Sarah around here, she is Aunty Sarah. She is family.

Last night I made this dessert for Sarah and Kyle (or “Kaya” as Simone calls him) and since it was such a hit, I thought I’d post it for them and for all of you. This is SO easy and will likely impress all of your guests – even the young ones. Now of course my picky kid won’t touch it because it has fruit in it, but if you have a picky kid who ONLY eats fruit, this might score a victory for you. And hell, if that fails, you can grab the bowl, a spoon and chow down yourself. Also makes an awesome breakfast warmed up (who doesn’t love dessert for breakfast?). 😉

Very Berry Crumble

6 cups frozen berries, thawed (I usually buy a big bag at Superstore – get whatever combo of fruit you like)
1 tbsp granulated sugar
1 tbsp cornstarch

1/2 cup quick cooking oats (I’ve also used regular oats when I don’t have the quick stuff)
1/2 cup all-purpose flour
1/2 cup packed brown sugar
1/2 tsp salt
1/2 tsp cinnamon
1/3 tsp ground ginger
1/2 cup cold unsalted butter, cubed

– preheat oven to 375. Lightly grease an 8×8 baking dish. I use a small/med casserole dish.
– place fruit in baking dish and gently toss with sugar & cornstarch
– in a bowl, combine all topping ingredients and cut the butter into theh mixture.
– mix topping so it resembles coarse crumble
– spoon/pour topping over crumble in baking dish, and add a few more small cubes of butter on top
– bake for 40-45 minutes, until crumble is golden and fruit is bubbling

Don’t make my mistake: go and get some vanilla ice cream and serve to serve with it! Sorry Kyle, next time I promise to remember the ice cream.

    Mmmm … crumble! Even MY picky kid will eat this!! What a good idea. Guess what the Days are having for dessert tonight?!

    My picky kids don't touch the stuff. Their uncle makes it (or something similar) all the time there's a pot luck or there's guests at their house. The girls take one lick (not even a bite!) and go "blech".
