Nanny’s Lemon Cake

Ok, so not a lot of nutrition packed in this little loaf of goodness, but it’s one of those comfort snacks for me. Lemon cake and a cuppa tea. Mmm…so good.

Simone devoured it, which of course because my brain is wired this way, makes me obsess about finding a way to hide fish and broccoli in it for next time. LOL! Ok, sometimes we just have to let it go and bake something that is tasty and not healthy. 😉

Nanny’s Lemon Cake

1/2 cup shortening
1 cup white sugar
2 eggs beaten
rind of 1 lemon
1/2 cup milk or water
1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt

Bake at 350 degrees for one hour

Topping
3/4 cup sugar
1/4 cup lemon juice
(melt together and brush over cake)
