Awesome Banana Blueberry Muffins

Our good friends Carolyn and Jamie had us over to Victoria for a visit in July, and Carolyn made these muffins which were in my opinion, PURE perfection!

Awesome Banana Blueberry Muffins

1 cup oatmeal
1/2 cup white flour
1/2 cup whole wheat flour
1/2 teaspoon salt

Slightly more than 1/2 cup brown sugar (I usually do a heaping 1/2 cup)
1 egg (lightly beaten)
2 small very ripe bananas (or 1 very large)
1/4 – 1/2 cup canola oil or applesauce or some combo of the 2.

1/2 cup buttermilk (can also use plain yoghurt or make a buttermilk substitute*)
1 tsp baking soda

Mix oatmeal, flours and salt and set aside. In separate bowl mix together brown sugar, egg, bananas and oil and set aside. In separate dish or measuring cup mix baking soda into buttermilk. Mix wet into dry ingredients and spoon into greased muffin tins. I always add 1/2 to 3/4 cup of frozen blueberries. Can also do chocolate chips or walnuts or whatever! Bake at 400 degrees for 20 – 25 minutes.

To make healthier you can use all whole wheat flour and all applesauce. I usually use a combo of applesauce and oil or just 1/4 cup oil.

*Buttermilk Substitute
1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.

2. Add enough milk to bring the liquid up to the one-cup line.

3. Let stand for five minute. Then, use as much as your recipe calls for.
