Sloppy Jo’s

Remember eating these as a kid?! Yum, I absolutely loved them. I now make them with some hidden veggies and on GI buns from Cobs. Still delicious.

Sloppy Jo’s

  • Make your favourite tomato sauce (or just used canned Italian tomato sauce)
  • Add grated zucchini and/or grated carrot
  • Add cooked ground turkey if you prefer over beef

Cut and lightly toast under the broiler your favourite hamburger-style buns (as mentioned above, I enjoy the high-fibre white GI buns and bread from Cobs).
Spoon mixture on buns.
Top with grated parmesan cheese.

We can all be kids again eating this meal.
