Princess Pancakes

This was a spontaneous snack at school today. To be honest, I was a little apprehensive about going into the trenches and cooking for a hungry group of highly critical individuals, but whew, I survived! And the pancakes turned out great and I promised to be back to do another batch soon.

Princess Pancakes (name suggested by Morgan & Simone)

1 cup all purpose flour
1 cup whole wheat flour
2 tbsp sugar
2 tsp baking powder
1 tsp baking soda
“sprinkle” in flax seeds (aka “fairy princess dust”)

1/2 tsp salt
2 cups milk
2 eggs (beaten)
Either 2 tbsp vegetable oil or do 1 tbsp oil and 1 tbsp apple sauce
1/2 tsp vanilla

I had my little helpers combine all the dry while I combined all the wet; then I added wet to dry and stirred by hand well.

Just like standard pancakes, I heated a pan, added butter, and then made small pancakes, about 2″ diameter, and on the raw side added pink sprinkles and stars (fairy trademark).

They were eaten enthusiastically without any syrup, which to be honest, is a little weird to me, but hey, whatever works! 🙂
